Nope they carry bubonic plague. These little guys are cute but as many varmints very destructive. They dig burrows that cause cows and horses trip in and break their legs causing the rancher to have to shoot the animal. The government tried poisoning them but it created more environmental damage than it killed the prairie dogs.
This sport, if you will, contribute to the American Indian economy by bringing hunters to the area and all that entails.
Other than this I believe if you shoot it you should eat it, but you simply can't eat these guys. Bye the way they are a cannibalistic species and eat the internal organs for the protein and the stomach contact for it's nutritional value of those shot....yuk
